Anyone know if you can book this hotel online?

Of if perhaps they have an email address?

I%26#39;d rather not do any bookings for my trip over the phone since I%26#39;ll have no paper trail.

Sorry just looked at the web-site and there appears to be no e-mail so I would suggest using fax for your paper trail. Fax is still a popular way of booking in France.
