My girlfriend and I will be arriving in Paris on May 3 (Thursday). We will be staying in an apartment on Rue Rollin in Latin Quarter.
Since our flight arrives in the late afternoon, it is likely we won%26#39;t settle into our apartment until 7, 8pm at night. Is there any grocery stores nearby that open late, so we can get some food (eg: fruits, salami, cheese, milk, etc) and supplies (haha, toilet paper seems to be a popular one)?

I can%26#39;t say about the area you mention in particular, but every neighbourhood in which I%26#39;ve stayed in Paris has always had its own small shops that sold exactly what you want to buy, and there were always one or two that were open until rather late in the evening - perhaps 11:00PM. I%26#39;ve never had to go more than 3 blocks to make my purchases.
The TP I would bring from home unless you know which brands are most comfortable to use.

I would also bring TP and soap, shampoo in your luggage as you might find you are later than you plan and you cannot afford to find these are not supplied at the apartment and shops are closed. Rue Rollin is pretty close to Place Monge but I am not sure what supermarkets etc are nearby or their hours so best to cover essentials.

I know there is a small family run grocery in the pedestrian area of the 5e...(It was a little more expensive and have only a few choices such as cheese etc.)

There are several supermarkets there, for example Ed at 37, rue Lacépède, or Champion at 34, rue Monge. The Champion is open six days a week from 8:30 to 21:00.
